Tigger's daughter is refusing to eat meat so I thought this would be a good time to start a thread on meatless meals. She does like beans of any kind which is great since they are a good substitute for meat and an excellent source of omegas.
TACOS or BURRITOS- mix a little taco seasoning mix directly in the refried beans and just make them using the beans, no meat.
PIZZA NOODLES- you can make hers by using pizza sauce and just not put any meat in
CHILI- is very good without meat, just use a lot of beans. You can always make it without meat and save some out for her, then add meat to the rest.
VEGETARIAN VEGETABLE SOUP- Add some lima beans to it

You guys know I hate to cook so anything fast and easy is my cup of tea. It certainly doesn't compare to chili made from scratch but here is my very quick version of chili:
1 can of chili beans (DO NOT drain) 1 can of kidney beans (drained) 1 can of corn (drained - by adding the corn it makes a complete protien) 1 can of tomato sauce 1 -2 Tbsp sugar (taste to determine your preference of sweetness) 1 Tbsp chili seasoning Sour cream to taste
(You can doctor it up by sauteing onions, green peppers, chopped tomatoes and adding to the mix)
Heat it all up in a pan. Serve with a dollup of sour cream and crackers.

Hey CG,
It's great for me too because it's Lent right now and on Fridays meatless meals are the deal. I also don't always have a lot of time to cook and meals and they have to be quick ones. Thanks so much for the great recipes and info. My mouth is watering now.

I have tons of these because my husband is a vegetarian, and I love to cook. My corn and pepper soup actually won runner up in a national vegetarian cook off, but it's not easy to make, and when the vegetarian organization who ran the contest found out I wasn't a vegetarian, they didn't publish the recipe!!! Humph! LOL! If you want recipes for any of the following, let me know. Some of the recipes are mine and some aren't: Mac and Cheese, Fettucini Alfredo, Ziti, Manicotti, Bean Burgers, Vegetarian Pot Pie, Spinach and Feta Quiche, Tomato and Basil Soup, Vegetable Soup with Cornbread Dumplings, Pimento Cheese, Spinach Salad. I don't know what kind of recipes you guys are looking for. Hey, I could publish one a day! Just kidding.
Vegetarian Pot Pie, Spinach and Feta Quiche, Tomato and Basil Soup, Vegetable Soup with Cornbread Dumplings all sound really good.
