# I love green peppers but my kids don't. I came up with a recipe that suits everyone in my family and guests rave about it.
I cut the tops off of green sweet peppers and put them in a covered casserole dish with at least three cups of water. I cook the peppers in the microwave until tender but still firm.
Use the water from the peppers to cook instant rice. You can add extra water if you need to.
Mix the rice, some ground beef and a jar of spaghetti sauce. Use it to fill the peppers 1/2 way. Put a spoon full of cottage cheese and if you desire, a little mozzerella or provalone on the rice mixture. Finish filling the peppers with the rice mixture.
Surround the peppers in the casserole dish with the leftover rice mixture. Sprinkle mozzerella cheese over the top, cover, and cook in the microwave or regular oven until thoroughly heated through.
The people who don't care for peppers get the rice and the others get the stuffed peppers.
I make a lot and freeze the individual leftover peppers in quart size freezer bags. They are quick and easy to thaw and reheat in the microwave and even better than when freshly cooked.
