Ok, I'll kick this one off. I am a big soup person -- they are easy to make and they last awhile (leftovers). Here's a quick and easy, yet homemade veggie soup:
1 - 1/2 lbs lean ground beef (browned w/ onions)
stewed tomatoes, diced, spaghetti sauce (whatever form of tomatoes you like)
lots of Italian seasoning
2 pckgs frozen mixed veggies (I like PictSweet) thawed in microwave
Dump it all in a pot and simmer.... top with cheddar cheese (if you haven't gone dairy free) or you can use low carb tortillas and melt cheese in those, yum!
Here is another -- my mom always calls it Portugese Soup
one pack of polish kielsaba sausage sliced thin and browned
add two chopped onions to browned sausage and cook til transparent
add 4 to 6 cans drained red kidney beans
add one small cabbage, coarsely chopped
add 6 to 8 red potatoes quartered with skins on
add enough beef broth to cover all
stir in 1 cup ketchup (more if you like)
season with salt and pepper
simmer til tender.

Here's a recipe for one of my favorite soups, modified from The Yellow Farmhouse Cookbook. Since it's getting to be that time of year for soup...Oh, and for all you vegetarians, like my husband, you can substitute vegetable stock for the chicken stock and leave out the sausage.
Lentil, Tomato, and Rice Soup
2 tblsp. butter
2 tblsp. olive oil
I cup of onion, chopped
1 stalk of celery, chopped
2 carrots chopped
2 large cloves of garlic, minced
1 cup of lentils, cleaned and picked over
5 cups of chicken stock
5 cups water
2 cups canned chopped tomatoes, with their juice
1/2 teaspoon salt or to taste
Freshly ground black pepper to taste
1/3 cup uncooked rice
1/2 pound fresh spinach leaves, stemmed
l large link smoked sausage (I think that's around a pound), sliced into 1/2 inch slices
Heat butter and olive oil over medium heat. Add onions, carrots, and celery and saute for ten minutes or until the vegetables are tender. Add garlic and cook another 2 minutes. Add chicken stock, water, tomatoes, and lentils. Simmer for 45 minutes, then add sausage. Cook for an additional 15 minutes. Add salt, pepper and rice. Cover and cook for another 15 minutes or until rice is done. Taste and adjust the seasonings. Add spinach and cook for two or three more minutes, just until the spinach is wilted. Serve immediately, with garlic bread or other hot crusty bread.
