Super Star Pumpkin Bars
Ingredients:
For bars:
2 cups all-purpose flour (can substitute Spelt flour)
1 cup sugar (can substitute Sucanat)
1 tablespoon cinnamon (ground)
2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon sea salt
1/2 teaspoon nutmeg (ground)
1/2 teaspoon cloves (ground)
1/2 teaspoon vanilla extract
15 ounces pumpkin, canned
4 large Organic Valley Grade A Omega-3 Brown Egg
3/4 cup applesauce
1 cup raisins
For frosting:
6 ounces Organic Valley Neufchatel Cheese
3/4 cup powdered sugar (organic)
1/3 cup Organic Valley Salted Butter
1/4 teaspoon vanilla extract
Instructions:
1. Preheat the oven to 350°F. Grease 15 1/2 x 10 1/2 x 1-inch baking sheet.
2. For bars:
Stir first 8 ingredients/dry ingredients in large bowl to blend. Add vanilla extract, pumpkin, eggs and applesauce. Beat until well blended. Mix in raisins.
Add chopped nuts and/or crystallized ginger if you desire!
3. Spread batter in prepared pan. Bake 20- 25 minutes, or until tester inserted into the center, comes out clean. Remove from oven and allow to cool on a rack.
4. For frosting:
These bars are so yummy, you really don't need frosting to enhance flavors. But if you insist....beat Organic Valley Neufchatel Cheese, powdered sugar, vanilla extract and Organic Valley Salted Butter in medium bowl to blend. Spread frosting over cake in a thin layer. (Can be prepared 1 day ahead. Refrigerate until cold, then cover and keep refrigerated.)

Ham Salad Rolls
This ham salad sandwich is a snap to mix up in the food processor, or mince the ham by hand and mix the ingredients together for delicious sandwiches or filled rolls.
INGREDIENTS:
* 2 cups diced ham
* 1 rib celery, cut up
* 1 onion slice, about 1/4-inch thick
* 6 to 8 tablespoons mayonnaise
* 2 tablespoons minced sweet pickles or sweet pickle relish
* 1 to 2 teaspoons sweet pickle juice, optional
* dash pepper
* 1 hard-cooked egg, diced
* lettuce
* soft rolls, split
PREPARATION:
In a food processor, combine the ham, celery, onion, and pickles or pickle relish. Pulse until minced; transfer to a bowl. Mix in mayonnaise until well-moistened, along with sweet pickle juice, if using.
Add pepper, to taste, and stir in the diced hard-cooked egg. Arrange lettuce on rolls; fill with the ham salad

Trail Bars with Chocolate Chips or Raisins
These bars make a nice addition to lunchbox or backpack. They're made with chocolate chips or raisins, nuts, wheat germ, oats, and other ingredients.
INGREDIENTS:
* 1/3 cup butter
* 1/2 cup light brown sugar, packed
* 1/2 cup quick oats
* 1/3 cup all-purpose flour
* 1/3 cup whole wheat flour
* 2 tablespoons toasted wheat germ
* 2 eggs, beaten
* 1/4 cup light brown sugar, packed
* 1/2 cup blanched slivered almonds
* 1/4 cup flaked coconut
* 1/4 to cup semisweet chocolate chips (or raisins)
PREPARATION:
In a mixing bowl, beat butter with 1/2 cup brown sugar until light and fluffy. Stir in oats, flours, and wheat germ. Press mixture into a buttered 9-inch square baking pan. Bake at 350° for 10 minutes.
Stir together the eggs and 1/4 cup brown sugar; stir in almonds, coconut, and chocolate chips or raisins then spread evenly over the baked layer. Bake at 350° for 20 minutes, or until browned. Score bars while still warm.
Makes about 24 bars.

Yogurt Fruit Dip
Serve this dip with wedges of fresh fruit.
INGREDIENTS:
* 1/4 cup peach or apricot preserves
* 1 cup vanilla yogurt
* 1/8 teaspoon ground cinnamon
* sliced fresh fruit
PREPARATION:
Combine preserves, vanilla yogurt, and cinnamon. Mix well; chill for at least 1 hour. Serve with fresh fruit wedges.
