Does anyone have any good recipies that do not have red meat in them and are easy to chew. I am running out of things to cook my Mom and she has to have a somewhat soft diet because her nebulizer does a number on her mouth and it is too sore to really chew. I fix the same thing over and over and it is getting so old.
Any ideas I will welcome.

JJ, does your mom like Polenta? You can add all kinds of things, like cheese, garlic, whatever would be soft to it.
I'm going to try to think of some more things too. Polenta just popped in my head first.

Ok...I just looked up some ideas on the web.
Mac and Cheese...you can a lot of different things to this to flavor it up.
Cheeze Ravioli...same with this one.
Quiches...just have her pick her favorite ingredients and very easy to make.
Sweet potato souffle...mmmm.
Stuffed eggplant parmesan...also a good one.

I have a couple good soup recipes if you want them. Also chicken and dumplings, chili (you can use turkey instead of beef), and several casseroles. I have some delicious Greek recipes too-mousaka and pastitsio which are both a sort of casseroles. I make them with ground beef but again you could substitute ground turkey. I have an amazing recipe for something called Bubble and Squeak which is eaten in England. It is essentially left over veggies and meat fried in mashed potatoes. Now I'm hungry. Let me know if you want any recipes and I'll PM them to you. Thinking of things to make for dinner gets tiring.

Hey KK, I would love that recipe for pastitsio if you will share it. They used to make it at that Greek owned restaurant I used to work at & I loved it.
JJ, we make a crock pot dish we just call beef & gravy...you could substitute chicken or the vegetarian crumbles instead of the beef. Just throw a can of mushroom soup & a soup can of water in the crock pot. Stir in an envelope of onion soup mix & then your meat of choice. Sometimes I add extra onions or mushrooms. Then cover & let it cook all day. When you are ready to eat it, prepare some rice, mashed potatoes, or egg noodles & top it with the crock pot mixture. Its sooooo good & so very easy!

I'm sorry everyone. I had forgotten I posted this and for some reason I don't check the lower boards like I should.
Bugs, Polenta is a great idea to try with my Mom! I think she'd love it. I think I'll also try the eggplant parmesan and look up a recipe for sweet potato pie. My mom loves sweet potatos but I don't think she ever had eggplant so we'll see.
KK, I'd love you forever if you'd pm me both of the mousak and pastitsio. My Mom loves Greek and Italian foods as do I, except for my portion I leave out the meat.
Also, I'll take any soup recipe. We both love soups and I can usually make some on the side for me without meat.
I also should try chicken and dumplings but the smell of boiling chicken (when it first start cooking) makes me throw up. Really it does. Yuk, yuk! I may be able to just use pre-roasted chicken, some chicken broth or something but she does love dumplings. She used to make delicious dumplings so I can get her input on that.
If you guys think of anything else feel free to post it. And just so you know the things I typically make for Mom, below is a rough list. (Some with veggie & fruit side dishes):
Homemade veggie pizza Ravioli (stuffed with mushrooms, meat &/or cheese) Spagetti Lasagna Cheesy broccoli soup Omelets (she prefers this for lunch/dinner Mac and cheese (on rare occasions & usually with tuna added) Chicken salad Tuna salad Egg salad Fish Chicken nuggets (her preference of how to eat chicken - she is very close to being a vegetarian like me) BT's (BLT's minus the lettuce and with soy bacon) Vegetarian stuffing Potatoes (fixed in every way conceivable)
There are more things but those are the things I make rather regularly.
