PEPPERMINT CREAMS(SORRY DON'T HAVE CONVERSION)
1 EGG WHITE 350G WHITE ICING SUGAR(CONFECTION SUGAR FOR USA I THINK) EXTRA FOR SHAPING 2 DROPS GREEN FOOD COLOURING 125G DARK CHOCOLATE,BROKEN INTO PIECES.
WHISK THE EGG WHITE UNTIL FROTHY.SIEVE IN THE ICING SUGAR AND MIX WELL.ADD THE PEPPERMINT ESSENCE AND COLOURING AND MIX WELL. SPRINKLE ICING SUGAR ONTO YOUR HANDS.ROLL TSP SIZE AMOUNT OF THE MIXTURE INTO SMALL BALLS AND PLACE ON THE BAKING TRAY. FLATTEN EACH BALL WITH A FORK TO FORM FLAT DISCS.PLACE IN THE FRIDGE FOR 1 HOUR UNTIL FIRM. PUT CHOC PIECES INTO BOWL IN MICROWAVE ON LOW UNTIL MELTED.ALLOW TO COOL A LITTLE. DIP EACH SWEET INTO THE CHOC UNTIL 1/2 COVERED.PLACE SWEETS ON THE NON STICK PAPER TO SET.KEEP IN FRIDGE UNTIL NEEDED.

MUNCHY FLAPJACKS
175G BUTTER 125G SOFT LIGHT BROWN SUGAR 55G GOLDEN SYRUP 350 G PORRIDGE OATS
PREHEAT OVEN TO 180C GAS MARK4 PUT THE BUTTER,SUGAR AND SYRUP INTO THE SAUCEPAN. HEAT OVER A LOW HEAT FOR 2-3 MNS,STIRRING UNTIL MELTED.REMOVE PAN FROM HOB,ADD PORRIDGE OATS AND MIX. POUR MIXTURE INTO LINED RECTANGULAR CAKE TIN.PRESS MIXTURE DOWN WELL WITH SPATULA. BAKE FOR 25/30 MNS IN CENTRE OF OVEN UNTIL GOLDEN BUT SLIGHTLY SOFT. ALLOW TO COOL FOR 10 MNS THEN CUT INTO SQUARES AND ALLOW TO COOL COMPLETELY(LEAVE IN PAN) CAREFULLY REMOVE FROM TIN.CAN BE KEPT UP TO A WEEK IN AIRTIGHT CONTAINER.
YOU CAN PLAY AROUND WITH THESE RECIPE.PUT HONEY INSTEAD OF SYRUP,ADD DATES,SUNFLOWER SEEDS TO BE EXTRA HEALTHY OR CHOC CHIPS AND MELTED CHOC ON TOP IF YOU WANT TIO BE NAUGHTY.

And as far as I can tell the 180 degrees celsius converts to about 350 degrees Farenheit....I assume that the "mark 4" is something that is on European stoves that is not on American???

which should we use for the oatmeal (porridge oats) the quick cooking version, or the old fashioned (longer cooking version), and should we use the measurement for the flaked coconut, maybe? That would be 4 and 1/2 cups...or for the grated coconut which would be 3 and 1/2 cups....or just put in the lesser amount and check the consistency, I assume that the consistency should be quite thick.....

Ok I went to the store and bought some dried fruit, sunflower seeds, peanuts and the quick cooking oats....I am going to try to concoct a couple different versions of the flapjacks tomorrow...I don't care how high calorie they get because I am going to pack them for Chase in his lunch and for his 'on the bus ride home snack'...he is starving on the bus home and if I forget to pack him a snack, he is not a happy camper when he walks through the door..I am going to add chocolate chips too!
I also bought the ham for the chowder. I already have the rest of the ingredients....
I hope to make at least one of them tomorrow...I will let you know how they turn out!
